The story behind the famed “Hot Lobster Sandwich” (and the recipe!) The Hot Lobster Sandwich was “invented” in Yarmouth NS at Harris’ Seafood Restaurant in 1951. One of the popular dishes Clara and Charles served was Lobster Nova Scotia Style—a generous portion of freshly cooked lobster cut up and served with cream, butter, salt and pepper (and a secret ingredient!) One evening, a customer asked Clara if she would serve this with toast. This birthed the now famous Hot Lobster Sandwich that is served in countless places in Atlantic Canada.
Nova Scotia Style Lobster and Hot Lobster Sandwich 2 C cooked lobster meat Cut the lobster in chunks then sauté in butter for 1 minute. Add vinegar and stir. Add the cream and season. Heat through and serve with mashed potatoes. Or dish out between two pieces of toast for a “Hot Lobster Sandwich”. Reserve some of the creamed lobster for the top. Serves two.
